INGREDIENTS
Lean turkey mince (7%) | 450g
Onion | 1 medium
Bell pepper | 1
Chopped tomatoes | 400g (1 tin)
Tomato puree | 1 tbsp.
Chipotle paste | 50g
Chilli powder (hot) | 1 tsp.
Cumin | 1 tsp.
Chicken stock | 300ml
Coconut oil | 1 tsp.
Brown Rice | 120g (dry)
METHOD
1. Heat a large frying pan with the oil, add onion & fry until soft.
2. Add turkey mince and brown
3. Add chilli powder, cumin, chipotle paste, tomato puree, bell pepper & mix.
4. Add chopped tomatoes & chicken stock, reduce heat and allow to simmer until reduced. Add more water if needed.
5. Serve with brown rice (40g dry weight per serving).
